Kagoshima's local ramen, featuring a cloudy broth based on pork bones combined with chicken bones and vegetables. Compared with other Kyushu tonkotsu ramen, it is mellow with little pungency. Keihan (Chicken Rice with Broth)

A local dish of Amami Oshima. Rice is topped with shredded chicken, shredded egg, sweet simmered shiitake, pickled papaya, green onion, nori and citrus peel, then plenty of hot chicken broth is poured over. Shirokuma (Fruit-Topped Shaved Ice)

Kagoshima's signature shaved ice: fluffy ice drizzled with plenty of condensed milk and colorfully topped with fruit, agar jelly and beans. Akumaki (Lye-Soaked Rice Cake)

A local sweet essential to the Boys' Festival in Kagoshima. Glutinous rice is soaked in lye water, wrapped in bamboo sheath and boiled in lye water for a long time. Jambo Mochi (Two-Stick Rice Cake)
