Sicilian Rice (Meat and Salad on Rice)

A local dish of Saga City: rice topped with stir-fried sweet and savory meat and raw vegetables such as lettuce, tomato and cucumber, drizzled with mayonnaise. The combination of warm rice and meat with cool vegetables is fun, and it is nutritious too. It is said to have been born at a cafe in Saga City, and the origin of the name is unclear. Many cafes, Western-style restaurants and diners in the city serve it, each with its own presentation and seasoning. It is generously portioned.

Karatsu Burger

唐津バーガー

Hamburgers sold from a van inside Niji no Matsubara in Karatsu, one of Japan's three great pine groves. Each one is slowly grilled on a griddle after you order. Soft buns with a juicy patty, egg and cheese give it a simple, nostalgic flavor that is very popular. Eating one fresh off the griddle among the pines is part of the fun. Many people stop by while driving through the pine grove. Combine it with a visit to Karatsu Castle.

Ika Shumai (Squid Dumplings)

イカしゅうまい

A specialty of Yobuko, a town famous for squid: shumai made with lots of squid paste. Instead of a wrapper, many are coated with thin strips of wrapper like petals and steamed. They feature a fluffy texture, squid umami and a hint of sweetness. At Yobuko squid restaurants, they are often served as part of a live squid course. Frozen versions are also made and are easy to find at souvenir shops in Saga and Fukuoka. They make a great souvenir.

Saga Ramen

Tonkotsu ramen loved in Saga. Compared with Hakata ramen, the broth is mellower: rich but with little pungency. Many shops use slightly thick straight noodles. Topping it with a raw egg and stirring it into the broth is the Saga way, making it even milder. The strength and aroma of the broth vary by shop. Old-fashioned shops are scattered across Saga City and the prefecture. It has a simple, nostalgic taste.

Saga Beef Steak

Steak of Saga beef, a brand name that only Japanese Black cattle raised in Saga and meeting strict standards may carry. Yobuko Squid Sashimi (Served Live-Fresh)

呼子イカの活き造り

A specialty of Yobuko in Karatsu, known as a squid town. Fresh swordtip squid taken straight from the tank is prepared on the spot, so the flesh is translucent and the tentacles are still moving. It has a crunchy bite and a rich sweetness. Afterwards, the tentacles and fins are usually cooked as tempura or salt-grilled. Squid restaurants line the area around the Yobuko morning market. Combine it with a stroll around the port town and Yobuko Bridge.

Ureshino Onsen Yudofu (Melting Tofu)

嬉野温泉湯豆腐

A specialty of Ureshino Onsen: tofu simmered in Ureshino's hot spring water. The minerals in the water melt the surface of the tofu, giving it a silky, meltingly soft texture. The broth turns milky, like mellow soy milk. It is eaten with sesame sauce, and you can enjoy every drop of the broth. Try it at inns and restaurants in the hot spring town. Combine it with bathing in Ureshino Onsen, said to be one of Japan's three great springs for beautiful skin. The tofu can also be bought as a souvenir.

Boiled Takezaki Crab

竹崎カニの塩ゆで

A specialty of Takezaki in Tara, facing the Ariake Sea: gazami swimming crab boiled in salted water. Raised in the nutrient-rich sea, the crabs are packed with meat and full of rich flavor. Males are said to be best in summer and egg-bearing females in winter, so they can be enjoyed all year. Crab restaurants and shops selling boiled crab line the highway in Tara. Enjoy the unique scenery of the Ariake Sea with its huge tides. Take your time picking out the meat.

Kanzaki Somen

神埼そうめん

Hand-stretched somen made in Kanzaki. It has long been made with clear water from the Sefuri mountains and wheat grown on the Saga Plain. It is thin, silky and firm. It is said to have been made since the Edo period and is known as Saga's representative somen. Besides cold somen, it is also delicious hot as nyumen. It is sold at shops in Kanzaki and souvenir stores, and is often chosen as a gift. Its thinness shines best served cold.

Ogi Yokan (Sweet Bean Jelly)

小城羊羹

A specialty of Ogi, known as a yokan town with many yokan shops. Ogi yokan is the old-fashioned kiri yokan, whose outside has hardened into a crisp layer of sugar crystals. Enjoy the contrast between the crunchy outside and moist inside. In the Edo period, Saga lay on the Sugar Road along which sugar was carried from Nagasaki, and making sweets with sugar flourished. It is sold at long-established shops in Ogi. Savor it slowly with Japanese tea.

A Karatsu specialty: small round balls of bean paste wrapped in castella-like dough and baked. The name is said to come from their resemblance to shoro, round mushrooms that grow in Niji no Matsubara. Bite-sized, they combine moist dough with smooth bean paste, refined and pleasantly sweet. An ice cream bar made by a Saga confectionery company and long loved throughout Kyushu. Vanilla ice cream is coated in chocolate and covered with cookie crunch. The slight bitterness of chocolate, the crunchy texture and the mellow vanilla are addictive. If you get a winning stick, you can get another one free. It is sold at supermarkets and convenience stores in Kyushu. It is a nostalgic taste for people from Kyushu.
